2 eggs
½ c brown sugar
1 ½ c 2% low-fat milk
3 tbsp butter, melted
1 tsp vanilla
½ tsp cinnamon
2 tsp baking powder
1 tsp salt
3 c oats, rolled (raw)
Day before serving: Spray 8” x 8” glass baking dish with oil. In a large bowl, whisk eggs, then add sugar and beat well. Whisk in all other ingredients until all is incorporated, but do not overmix. Scrape all into dish, cover with foil, and refrigerate overnight. Next morning, preheat oven to 375 degrees. Once preheated, place oatmeal in oven. Bake covered for about 25-30 minutes (shake pan to see that it is set; do not overcook!).
